Green Olive & Pimento Cheese Mashed Potatoes
2 pounds Yukon Gold or Russet Potatoes, peeled and cut in 1” cubes
5 Tablespoons butter
1/4 cup milk, more if needed
1 jar Taste Weavers Green Olive & Pimento Cheese Dip
The green olives bring a bold flavor to this potato dish, hence, so yummy!
These mashed potatoes are wonderful with Beef and especially Lamb.
Fill a large saucepan with water and 1 tablespoon of salt on high heat and bring to a boil. Add potatoes bring back to a boil, reduce heat, cover and cook until tender about 15 minutes. Drain. Cover to keep warm.
In a small saucepan over low heat, melt the butter and add the milk and Green Olive & Pimento Cheese Dip. Stir until combined and just warm. Add to potatoes. Mash with a potato masher, season with salt & pepper to taste.
To garnish, chop olives with pimentos and sprinkle over the top of potato dish. Serve warm. Yields; 4-6.
