Pumpkin Whoopie Pies
1 pouch Krusteaz Pumpkin Pie Baking Mix
½ cup Butter or margarine, softened
1 Large egg
1 jar Any Taste Weavers Pumpkin Pie Dip (or any Sweet Dip to make other flavors)
8 oz. Cream cheese, softened
8 oz. Whipped topping
Heat oven to 350 degrees F. Lightly grease cookie sheet or spray with non-stick cooking spray. If necessary, soften cold butter in microwave on HIGH power for 10-15 seconds. Blend butter or margarine, egg and full pouch mix together in medium bowl until dough forms, hand kneading if necessary. Scoop dough by rounded tablespoons and place 2 inches apart onto prepared cookie sheet.
Bake 8-10 minutes or until light golden brown around edges. Cool cookies 5 minutes before removing from cookie sheet.
After cookies are cooled, place 1 tablespoon of Pumpkin Pie Fluff (see recipe below) between 2 cookies and roll edges in your favorite sprinkles and place in refrigerator until ready to serve.
For the fluff, combine the dip with the cream cheese and blend well. Add the whipped topping and blend. Serve with cookies, graham crackers or a spoon!
