Buffalo Wing Dip

Pepper Relish Hash Browns with Bacon


3 slices bacon
1 pound baby new potatoes, sliced in half and then in ¼“pieces (half moon’s)
Salt & freshly ground pepper to taste
½ cup Taste Weavers Three Pepper Relish


Tired of boring old hash browns, then this is the recipe for you!
They are great for breakfast or dinner.
In large heavy skillet cook bacon over medium until bacon is crisp and fat has rendered. Remove bacon to paper toweling then chop and reserve.
Place the same skillet over high heat and add the potatoes and cover. This allows the potatoes to brown and steam. Periodically stir potatoes to brown, being careful not to burn. When they are fork tender and browned, remove from heat and stir in relish. Remove to a serving dish and sprinkle with the bacon. Serve warm. Yields; 4-6.
